Restaurant analytics: the numbers worth watching

Which KPIs matter, how to read a daily sales report, and how to use what you already know about your peak hours and best-sellers to make a decision.

Most restaurants have more data than they use and fewer numbers than they need. The billing system records every order, but nobody looks past the daily total — so the Tuesday that quietly lost money looks the same as the Tuesday that did not, and the dish that has been dying for two months is still on the menu.

You do not need a dashboard for this. Five or six numbers, checked once a week, cover almost every decision an independent restaurant makes: covers and average bill, food cost percentage, sales by hour, sales by item, and repeat customer rate. Each one points at a specific action — restaff a shift, reprice a dish, drop it, or leave it alone.
