The ticket that slid behind the counter

On paper, table 4 waits twenty-five minutes, complains, and the mains get comped. On the board, table 4's ticket is simply still at the top of the queue, visible to everyone on the line, until someone cooks it. The failure mode does not exist.

Starters out, mains held

A table of six orders across three courses. The line marks the four starters ready as they leave the pass; the waiter is not pinged for the whole order yet, so nothing is run early. When the last main is marked, the order flips to ready and the ping goes out.

What works

  • Mount the screen where the line reads it without turning away from the range — eye level at the pass, not on a side wall.
  • Accept a ticket as soon as the line picks it up. That one tap is what tells the rest of the team it is being cooked.
  • Mark items ready as they leave the pass, not in a batch at the end. The per-item state is what lets the floor time a table properly.
  • Put prep times on your dishes when you build the menu — they are what let the kitchen sequence a mixed ticket sensibly.
  • Keep a spare charged device. The board runs on the phones and tablets you already own, so a backup costs nothing but forethought.

What to avoid

  • Running the board and a paper rail at the same time "just in case". Two sources of truth is worse than either one alone.
  • Letting tickets sit unaccepted. An unaccepted ticket looks the same as one nobody has seen, which is exactly the ambiguity the board removes.
  • Marking a whole order ready when only half of it is. The waiter runs cold food and stops trusting the ping.
  • Putting the screen somewhere it has to be walked to. If reading it costs steps, the line goes back to shouting.
